Store them somewhere?
I find myself in the same situation currently.
I don’t play but am still attracted to the hobby. I don’t want to buy anything because i say what the heck am i gonna do with it?

The key is asking yourself what you enjoy.

It might be owning and displaying a model
Painting
Building

Any one or combination of those can make it worth owning a model when you don't game (either in general or with the model specifically).
However if you're drawing a blank on them then if there's no fun in "putting it together" and no fun in display/ownership then yeah you might well be the kind of person who more wants to only buy what they game with and if you can't game you might find you engage better with video games; lore; film etc..

I'm definitely more of a painter than a gamer, I've got a ton of; rune wars, oathmark, stargrave, draculas america, Beyond the gates of antares. Recently getting into 3d printing hasn't helped with the growing hoard either. I do try to play every game at least once and having a nerdy family helps with that.

As mentioned, I'm not one who buys without intention to play. However, there's nothing wrong with purchasing miniatures and treating them like other kinds of models. Building, converting, painting, displaying, collecting, etc can be a hobby in itself. There are allot of folks who don't game or game so rarely that they're primarily painters and collectors.

You might even find down the road you'd like to take some of those minis and dabble in minis-Agnostic gaming like Grimdark Future or Space Weirdos.

NEVER. NEVER ACCEPT!!!
It wasn't until Reaper KS I that considered painting miniatures (because the paint was on sale!), and I only started once I retired.

All according to plan!
Best part about solo gaming is that you DON'T have to paint all the mini's ahead of time. You stop the game to paint only the mini's you need for the next scenario or even turn. I'm finally getting to some 20-year old Descent 1st edition bane spiders and a Reaper 4 KS goblin boss painted this way!

I have many miniatures that I'll never play the game they were originally intended for.
They were bought for one, maybe both, of the following reasons:
1) Just a cool enough model - it'll go onto the shelf with many other very cool models. And eventually painted up.
2) I plan to use them for some other game. Where they get stored is variable. Some will stay on the cool minis shelf, some into army cases, some into dedicated storage totes (for ex: D&D/PF "Pirates")
