Do a pair of sponsons on a vehicle count as one weapon or two?

Two.

The only time two weapons count as one is when they're twin-linked.

Ok, so just to clarify, here's the scenario: Let's say I'm deepstriking a Valkyrie; I know I can fire both my rocket pods since they count as defensive weapons, and since I'm a fast vehicle moving at cruising speed, I can fire one weapon, so I could fire a multi-laser or ONE of my two heavy bolter sponsons?

Correct.

If you can keep your head, while all about you are losing their's, then you have probably completely misunderstood the situation!
