Orks follow a mass fire and close combat philosophy.
That being said, if you take a shooty element, take lots of it.
As for close combat, it is equip a nob upgraded with powerklaw and get it into combat as quickly as possible. Failing that, piling on as many boyz as can be piled on in order to overwhelm an opponent.
There are several ways to progress:
footslogging- as many boyz as you can take. Bring along KFF big meks to shield the army and grots as a cover shield for the forces behind. Shoota boyz in abundance with one or two slugga and choppa boyz mixed in. Some extra kannons and lobbas may be useful here as cheap weapon support.
footslogging with kans (kan wall)- make the boy squads primarily shoota boyz, with one slugga and choppa squad (maybe 'ard boyz as well). Get some moar lootas, killa kans, big meks with KFF, and deff dreads.
kult of speed- add in a few moar battlewagons, make the bw boyzs shootas, and if you take trukks, slugga and choppa boyz. BW carrying burnas is also thought to be useful. Big Mek with KFF is good. A warboss is not bad either.
biker army- moar bikes, and if it is a nob biker army, make sure to read up on how to maximize such as list, as you would need 2 warbosses and 2 nob biker squads.
Those are the major types people tend to build. You can do what you want and there is lots of variation on what people bring. Just look up dashofpepper's lists for the popular mech/kult of speed list.
