So a player told me that even though the options say all genestealers in the brood may take them, it dosent neccesairly mean that you can't take different options for each model, can anyone explain to me how that works?

It works by that player being an idiot/cheat.
Rude comments aside; it doesn't work at all. Both options make it very clear that all of them must be outfitted with the same upgrades, and if you take the upgrade on 1 you must take it on all.
The only upgrades that are allowed to be on less than all models is Scything Talons (which can be on the Brood lord, just the genestealers, or both), and any of the Brood lord options which are of course broodlord only.

I don't have my codex with me so I don't know the wording. But it would depend on wheather it says "any model may take..." or "the entire brood may take...".

The entire brood has to take the same options. The person telling you this is flat out, 100%, utterly wrong.

The Tryanid Codex states that "All Genestealers in a brood may take: Scything talons..." and that "The entire brood may take: Adrenal glands... Toxin sacs..."
Either all Genestealers in a brood may take Scything Talons, or no Genestealers in a brood may take Scything Talons.
Similarly, either all Genestealers and their Broodlord may take Adrenal glands and/or Toxin sacs, or no Genestealers and their Broodlord may take them.
There is no option to mix upgrades except for the Broodlord, as already mentioned.
