The squad of shoota boys will ride in the battlewagon with the mek, covering the trukks. Deffkoptas will pop the tanks hopefully. I feel pretty good about this list, I'm just worried about not fielding enough boys. Any feedback would be appreciated.

Looks pretty solid.
My first suggestion would be to drop the shoota boys for more slugga boys. I would say that you'll very rarely be traveling at combat speed with the wagon, so the shootas won't get to shoot that often.
I would also drop the 'eavy armor and burna from the mek. If you do that and drop the big shoota (since they'll be sluggas anyway) that'll give you 30 points to work with (I think), in which you could give the wagon a boarding plank and the mek a PK. Then, after the wagon makes its ram, if there are any vehicles within 2", your boys can debark and assault and the mek can stay aboard and use the plank.

Thanks for the suggestion. I was wondering why people were taking boarding panks in the first place, your example is the first one that makes sense to me.
Once the boyz reach combat, should I try to ram other squads/tanks with the trukks? Or should I hold off and save myself from losing potential VP?

What would you suggest then? I've seen some lists that are similar but instead work another battlewagon with a killcannon. My concern is that I won't have enough boyz to be battling up close.

Your fire support is kinda weak. I'd run TL rockitt buggies over the deffkoptas in a list like this.
But you have the right idea and none of your units are bad.

Give the buggies shootas, maybe?
I would swap the 19 shoota boyz for slugga boyz but i'd keep a smaller unit of shoota boyz in there as well.

Yeah I like the buggies over the Koptas. I'd go 2/1/1 though instead of 2/2. More fire splitting that way.
I disagree with the other poster. I like shoota boyz in Wagons since you can shoot from the safety of the wagon platform if necessary and never leave the vehicle. Sluggas are fine for the trukks though.
