So this is my basic idea for a trukk-based 1000pt list. I have been reading that battlewagons are bad unless you run more than 1 but I kept it in the list to see what you guys think. The BM with KFF goes in the battlewagon with the large squad. What do you guys think? I'm not sure what to do with the 30 points remaining and I would really appreciate some criticism! Thanks.

Run the koptas in single squads, sure it add to KP, but you gain target saturation and selection. The 30 points looks like it would be best spent on a Big Mek PK or Deff Buzz - Merits for the mek are you can keep him boarded and Planking guys where DK gives turn one assault options...
Possibly as well, drop the RL for a BS and Grot Riggers, give yo an extra chance to make the wagon roll again each turn.

PK is bade for Mek. If a mek is in combat, it means he is going to be targetted due to being an IC and that PK means the entire enemy squad can hit him before he strikes back. Even with 5++, a tactical squad can down him.

Also littlenibbler Orks aren't about armour saves.
Orks are about having too many models on the table, and wasting the other guy's time with your movement phase.
Orks are about having the toughest units on the table.
Orks are about not caring about how many bodies are left in a long winding trail until the squad is down to less than a third its starting strength.
Orks are about rolling more dice then you can count without the aid of a calculator or a pen and paper.
Orks are about having totally fething insane characters tearing gak down like Doc Grotsnik, Ghazghkull or Snikrot.
Orks are about being too fething awesome to die...

You see the Mek never leaves the battlewagon. He just chills inside giving KFF and using the boarding plank/grabber klaw to assault enemy vehicles after the squad Nob has left. This is where the PK comes in.

He leaves the vehicle and the KFF is not going to be of much use then. its range is too small and the point of putting him in the wagon is that it extends the bubble of protection.

I don't think you understand how plank works. It allows you to have 1 model attack the enemy vehicle as if they were assaulting but you don't actually disembark. So the Mek never leaves the vehicle or becomes vulnerable to assault but he can still bring the PK to bear.

The mek needs to be close enough to an enemy vehicle that has been rammed by a Deff Rolla and is still able to threaten your army. That means its probably something with AV14, chances are, something hardarse is nearby. The best example is a Landraider with Assault terminators, probably a few TH/SS, after you break it, next turn they assault the trukk, and they will break it.
