Does anyone know if all Cadian uniforms/armor are green?

If you're referring to actual soldiery from Cadia, then it's green on green or green on brown.

If you're referring to the armor style, but not necessarily Cadian troops, then it can be whatever you want it to be.

Under the couch

The standard studio army is green and brown, but (fluffwise) the colours worn depend largely on where they're fighting.

There are a range of different Cadian uniforms (in all sorts of colours) shown in the last Imperial Guard codex.

The original studio model of Creed (as shown in the Eye of Terror Codex) wore urban camo.

Green on khaki is just the regimental colors of the Cadian 8th. The previous codex shows a bunch of different Cadian regiments in different colors. Of course you can paint your own army however you choose.

Cadians will fight in whatever colour uniform is appropriate for the environment. The green on brown is standard for most of Cadia's surface, but action at the poles, in urban areas, in deserts or off world require different colour schemes.

What kind of range of climate does cadia have, anyway? (assuming that it has any range, lots of planets in 40K seem to have only one climate for the whole planet...)

Given that and assuming that they aren't stupid, you could expect to see pretty much any type of camo. Currently military thinking is that brown is the most versatile colour.
