So, I've heard all over the place that Nob Bikers aren't all that. They have counters and everyone knows how to beat them, and I definately don't see them being used as often either.
I've never played a Nob Biker army, but I've mathhammered it out, and they seem to me that with proper ue an army of them can still beat many of the top competitve builds currently.
A good player will always either be turbo boosting, or assaulting, so you get a 3+ cover save. The only cover ignoring weapon that people seem to have is flamers, but those aren't a huge problem since you have 5++/FnP. An with only 20 models, hopefull you can keep them spread out so ordnance will be less effective. The only weakness I see in them that can't really be remedied with tactics is Assault Terminators, but evn then they can be stopped.
So, do you guys think an all Nob Biker army could still be good? Or, am I just completely missing the point of the counters to them. I mean, I could have 2 Warbosses, 20 Nob Bikers, and 2 squads of Gretchin at 1750, so thats kind of nice.

Yeah it's still a competative build if that's what you are asking. Ideally every powerbuild can and will be countered. Are you looking for some End All Beat All power list? Because GW does a pretty good job of preventing that from happening.

You forget that after you stomp someone in assault they get to shoot you without your cover... that is were they take it in the pooper with instant kill weapons.

Just like any other unit in the game that has been properly exploited by experienced players, Nob bikers can and still are a very effective unit., but must be used carefully.
The greatest weakness of a Nob biker is inherent in the cost of fielding a unit with bikes and multiple wounds; they become a massive point sink if you wish to have an effective unit (although you can still minimize point costs somewhere to make them cost less, if you field a full ten man unit of Ork nob bikers, you are spending alot of points no matter what even if you take no other upgrades).
Taking an all Nob biker army is really maximizing your army towards one facet of a strategy, which is a hard hitting, fast but small force of orks. Ultimately, you need to determine what is the best strategies involving your Nob bikers and what you can do to avoid situations wherein one mistake may cost you the game.
Avoid massed dakka of Str 8 or greater, avoid units that will swamp your nob bikers, and avoid things that nob bikers would have a hard time dealing with (which is very little actually, but getting swamped by horde armies like Term-spawning Nids is one of your banes) and of course, never ever get charged as the Ork player.
Oh, and make sure to keep out of LOS until you get the chance to charge your bikers foward in a mad dash, as bad movement is one of those one mistake things that costs you the entire match.

Having one squad "eat-it" so that the guys behind them can shoot up the assault unit is not a sustainable plan. Also if nothing else this tells you what one or two of your opponents squads are going to be doing the next turn so, assuming the bikers aren't your whole list, you can plan accordingly. It seems to me that Heavy weapons that shoot at your bikers aren't shooting at your tanks or walkers sot these can wreak havoc for another turn.
You can't lose a battle when you "control" your opponents next move.
