How do you show this? Like, what details make the Sgt the Sgt? Also, squad numbers; is this just fluff?

Squad numbers can help keep your army organised but it's mainly fluff.
Also Sgts can be marker our by different coloured helmet (blue or white for blood angels i think not to sure but you can do whatever colur you like) if they have one or by not having a helmet also augmetics (robot bits) mark ou veterans which would usually be Sgts.
Apart from that i'm not sure maybe a sword or a pose that makes him look like he is shouting orders or pointing at a target.

Or could just paint his head gold, that marks them as being veterans and they weren't put in charge of others for nothing!

Also it is typical that a sergeant is taken from the 1st company.

For BA Sgts you can have black shoulder pads with the trim red. The symbols could be white or yellow. You could also add something on his knee pad to distinguish him.

I'm just a fan of leaving sergeants without helmets if possible. Or you can use a different headstyle: like a beakie. And yes, I'm aware that most sergeant helmet-less heads come bald, which is why I greenstuff my own hair onto models. Hell, even my terminator librarian has green stuffed hair. The space vampire revolution will be primped and pampered!

Lol, I hate helmetless heads... more because I hate painting faces.

I just paint the helmet of the Sgt. in a contrasting different color.
