This list is a fundamental departure from my original thought process. Not sure how I feel about it with the lack AV14 armor. I will explain as the rest of the list as I go.

HQ
Co. Command Squad
Commander
Veteran w/ Meltagun x3
Chimera Armored Transport
Hull Hvy Flamer & Turrent Multi-laser 135pts

Elite
None

Troop
Veteran Squad w/ Plasma Gun x3
Chimera Armored Transport
Hull Hvy Flamer & Turrent Multi-laser 170pts

Veteran Squad w/ Plasma Gun x3
Chimera Armored Transport
Hull Hvy Flamer & Turrent Multi-laser 170pts
(Meltavets and CCS sit with Heavy Support section providing rear guard and counter assault punch early, then springs forward to capture objectives)

Veteran Squad (Vendetta)
w/ Meltaguns x3 & Demolitions 130pts

Veteran Squad (Vendetta)
w/ Meltaguns x3 & Demolitions 130pts
(Airborne element to tie down enemy points for the Vendetta's and Heavy Support section to do their work)

Fast Attack
Vendetta 130pts

Vendetta 130pts

Vendetta 130pts
(Transport 2 Meltavet squads then tank hunt)

Heavy Support
Hydra Flak Tank x2
Hull Hvy Flamer 150pts

Manticore
Hull Hvy Flamer 160pts

Hydra Flak Tank x2
Hull Hvy Flamer 150pts 1585pts
(Hydras pop transports, flyers, infantry at range. Manticore saturate areas of the table with multiple template hits)

I want an army list that will be good at taking on as wide a variety of opponents as possible. My last list was "all over the place" so this one is focused an rapid deployment/reaction, maybe to much so. Please feel free to pick this apart.

I've never seen a mechanized+air cav list before.

I agree with your gut feeling that there's something a little unsettling about it. I think my biggest complaint is that you have only 3 chimeras doing anything on the field while the rest of your stuff sits back.

It sort of feels like you're stretching your points too thin across HS, FA, and Troops. I think you might be better off turning those 2 manticores and 4 hydras into 3 hydras and spending the rest on mechvets or vendetta-vets.

Also, drop the flamers on the hydras and manticores, they are gonna be useless if they actually do their job.

On a side note the hydra's HB also ignores turbo-boosting and the save skimmers get from going flat-out, due to the hydra itself ignoring those things, not the weapon systems.

This might work better, focus more on getting a greater number of AV12 armor on the table. Right off the bat I can see problems with high AT armies but I have never run a Chimera Spam list. Also really missing the large template weapons and relying on speed to make up for range in the fast list. Has anyone played with or against a list similar to this? How did it go?

You could get Valks with MPD and Vendettas instead of the devil dogs.

That is a lot of plasma. I feel that you could make this list a lot better if you would as BlazinGhost suggested and replace all those hellhound chassis with Valks/Vendettas. If you do that then you could drop 2 chimeras and throw a vet squad into each skimmer, replace their plasma with melta, and then those demolitions doctrines would actually be of use. As I see it, your current plasma vets will not benefit much from the demolitions doctrine. To me the demo-pack and melta bombs are more geared for assault vets (i.e. melta, GL, flamer, w/PF) and not rapid fire troopers. With the extra points you'll save you should easily be able to add another HQ or Vet squad, I would think.

oops, looks like you forgot to bring anti-tank. You might be okay doing drive-bys on lighter vehicles, but against anything serious (13 or 14), you're going to be skewered and char broiled.
