I have a Dark angels army and it is all based off of the Dark Angels Codex. In the DA codex there is no option for assault marines to have thunder hammers, yet in the 5th edition space marines codex the option is there.
My questions is would i be able to take thunder hammer on a dark angels assault squad?
and while im on the subject how does this work for other things in my army such as the land raider redeemer being none existent in the dark angels codex (would i be able to use one?)

You can only use what is in your codex.
So if there is no option of Thunder hammers, you can't use Thunder hammers. Same with the Land Raider.

ok then. just checking as people make their own chapters up and use rules from different parts of the space marine codex i was just wondering if there was a loop hole at all.

When people make their own chapters up, they still only use one codex. To do otherwise is cheating.

If people are playing proper 40k, they may have their own chapter but they use one Codex's set of rules for that chapter. If someone makes up their own rules, or does a mix-and-match like BA assault squads, vanilla terminators, and grey hunters, that's using house rules if it's agreed on, or cheating if they try to sneak it in. You can do whatever you want with house rules, but it won't apply outside of your 'house', and if you ask somewhere like here the answer will always be 'no, you can't do that'.

No you may not.
In normal 40k there are no rules for taking allies. Within the (print only) DH and WH codexes you can take allies, but only with the rules as printed there.
What you CAN do is agree to take 2 FOC each, fulfilling the minimum requirements of each one, and play a game that way - each person has 2 armies.
This is however not warhammer 40k but a houserule, so you could not expect to do it against every opponent (plus requiring 2 FOC normally needs some advance notice!)
