I have some Gray Knights hanging around, and I noticed after reading their codex they can be taken with IG as allies. I was thinking of including a squad of gray knights with my Vostroyans (Do you think that would make sense fluff wise?). If this isn't too "Fluffy" I'll probably not do it since my Vostroyans are sticking to their background a lot. (I never saw anything about working with the inquisition in their fluff)

I'm not sure what I would use since most is NOS, any suggestions if this is a good idea?

It wouldn't be unfluffy. Grey Knights appear anywhere there is a Deamonic infestation to stop. The problem is that the Allies rule for GK will be done away with next codex release in March or January. After that it would be fine for friendly games as long as you have your opponents permission, but not for tournaments or most games you'll find in your lfgs.

Do it for the time being. they pretty much make up each others weaknesses VERY well.

GK are killers in CC but suffer from few numbers and little cheap long range anti tank

IG are masters of shooting with boatloads of autocannons/lascannons/meltas but dont do well in CC unless blobbed.

Plus a Dakkaquisitor is a great anti DS unit

GK are alright in CC. Their lack of attacks really hurt them.
Though then again, compared to a guardsmen, he might as well be a berserker.

They pair just fine, but be warned that the legality of this approach is already deeply mired in debate. Don't go buying models for the purpose of including them as allies, as it's very probable that they're going to get rid of allies.

I'm thinking about trying them out in a game since I have 8 of them (I believe).

Probably not going to buy much else.
