Example: My Black Templars Chaplain is in combat with an enemy, alongside his servitors and five tactical marines.

If the enemy attacks the Chaplain, can I assign the wounds to the servitors? Seeing as they join and leave units together with the chaplain, one could argue that they make up a pseudo-retinue of sorts.

For thirteen years I had a dog with fur the darkest black. For thirteen years he was my friend, oh how I want him back.

Only if it states they are a retinue (or bodyguard) OR that the Chaplain loses his IC states (which he doesnt, as he can still join units) would you be able to do that.

Hmm.

Would the servitors need to be treated as a separate unit in HtH then? I.e., Chap + 3 Servitors joins a 10x strong Crusader squad. Are the Chaplain, Servitors, and Crusaders 3 different units in the assault?

I've never noticed that.

Yes, they are, as they are distinct from each other. Same as SW Lord plus wolves plus GH unit, for example.
