I've noticed that in the past guard codex, the officers and their command squads had gold uniform trim/accessories while the present codex has some with red cuffs and the old cityfight codex has them with red shoulder pads. My question is, which of these are the "correct" colors? I just can't find any fluff or sources to direct me.

On the tabletop, I've seen everything from gold trim on Cadian officers to entirely different colored uniforms.

I suspect that trim colours would be regiment, company or campaign colours. There's nothing in the fluff to my knowledge to indicate whether or not every regiment/company has identical uniforms. Obviously with the Cadians there are some required colours such as the white stripes on helmets for conscripts but it is reasonable to assume that even they would have regiment and company markings somewhere on their uniforms.
