What wash would be best to use on white? Id like something to add some depth/detail but without changing the color.
I was thinking maybe some very thin, very light gray applied only to the details, but Im not 100% sure about it.

Depends on the look you want. If you started with a browny white and bone white then using a sepia or very light brown wash is a good idea. If you did a lighter blue or grey white then using a wolf grey or light black wash is the best.
Just think about whether you want the recesses black or dark, because often there is a difference.

also it depends on what army you're playing. you wouldn't put sepia on grey knights, for example, but you might on deathwing.

I usually do the following:
Clean, crisp white = Paint the white like you normally do, then wash it with a thinned down(very thinned down, like 1:3 Water-Wash) and have the model upside down while the wash dries. You can do this by putting a toothpick beetween its legs and place him over a peice of plastic glass. Then kleen it up until the black wash is only in the crevises and shaded areas.
Brownish, little shading kind of white = Again, paint the white like you normally do, then wash it with Gryphonne Sepia, and do the same as above, toothpick until dry, clean up.
Brownish, heavy shading white = Same as the Gryphonne Sepia recipie, only with Devlan Mud instead of Gryphonne sepia.

I use something more like 20/1 water/ink... but then I'm still using up my stocks of GW Ink vs. the new washes. Badab Black doesn't seem to be as dark as Black Ink was.

Thanks, thats the thing I was looking for. The "dirtier" whites are easy, just wasnt too sure about a real clean bright white.

I'd probably use a really watered down blue wash. Also, gretar, that's a clever idea for letting them dry, although I don't know exactly how well it would work.

I only recently started doing it. It pretty much prevents all(pretty much meening 90% if you'r washing it right) pooling on the miniature aswell as makeing the areas look cleaner that otherwice.
