Well I think 1mm is pretty universal size and you can do pretty much anything out of it.. So if you need to pick just one size of those take 1mm.

But I'ld suggest you to buy 0.5mm, 1mm, and 2mm thicknesses. With those you can everything you need for sure.

I find that 0.5mm and 1mm are the most usable but getting some 2mm too can't hurt. I can vouch for the guy who runs Station Road Baseboards he's my local supplier and normally very quick to send orders.

I would invest mostly in thicknesses up to 1.5mm. Beyond that the stuff starts to be hard to work with, 3mm will take some serious cutting.
