Any ideas?
I was wondering about them having some sort of crumbling effect, like where you have to roll D6 and if the result is higher than the wounds left the building crumbles. It would be more realistic than a 15 wound building on one wound still standing.

that rule makes sence but a Fortress or castle could still be standing if it had 1 wound left.
How about you roll D6 and on 1-2 the building crumbles and on 3-6 it stays standing.

IIRC: City Fight, Cities of Death, and the 7th Edition of WHFB all have rules for buildings being destroyed.

Buildings are essentially AV 14 all around immobile structures that can be embarked.
