Dust in the Wind is probably slow but has great parts to it, and on a similar note Carry on My Wayward Son. Peace of Mind by Boston is tasy and the guitar solos aren't terribly difficult if your guys can handle double-lead. I'll try to think of something from the last decade...

Seriously though, probably the coolest end to a concert I've been to (other than seeing the Wall performed by Waters himself) was a couple years ago when I saw Smashing Pumpkins. They had these timpani drums set up on one end of the stage and as an encore, Billy came out onto stage and started wailing on them. Eventually they started playing bird sounds in the background, and that was when I knew things were getting awesome. They broke out into Floyd's Set the Controls for the Heart of the Sun, and it was really cool. You'd need some timpanis though, and that's not exactly an easy thing to come up with, especially for a smaller band.
Working an original song in is always good, though I wouldn't recommend it for a closer. Largely it depends on the venue. If we're talking bars here, maybe Reel Big Fish's "Beer"?
But to be serious, I would shy away from the slower/sad sounding songs. It's anticlimactic and imo makes for a weak finish.
You should finish with something that you find to be upbeat, powerful and exciting. Something you know will get the crowd going. Judging by your set list you've got a lot of options since you've got a good variety going already. I would suggest something my Rammstein like Duhast.
