I was wondering about the fluff surrounding the Iron Men that almost destroyed the Imperium back along ways ago. I tried lexicanum but it proved not helpful strangely enough.

Well the Iron Men seems to be a general term for the advanced AI computers and automatons that humanity created to do its work for it. They became self aware and able to learn for themselves. Then for whatever reason they turned on humanity as a whole. This is why non organic component robots are strictly illegal in the Imperium. And one of its oldest laws. Its not stopping rogue organizations and forces from trying though.

Have you tried reading the Gaunts Ghost novels...I can't remember which one it was, but one of them features the Iron men in it, if that helps.

Basically:

There's no real official information about the Iron Men. Why is this?

There's nothing that's been set during the timeframe when AI constructs were common. Iron Men, however, is not a catch-all term for these AI constructs. Iron Men referred to a specific STC pattern that was "rediscovered" during the Sabbat Worlds Crusade, albeit a heavily corrupted iteration of it that lingered on a Chaos tainted world.

Said STC pattern was destroyed, as it seems that it is dictated by mandate of the Adeptus Mechanicus(at least the non-heretical parts of the AM).
