It would be very helpful if when searching and sorting a gallery, I could sort by the number of votes, i.e. eliminate those pictures from the search that have less than the 5 requisite votes to get a score.

You can filter by number of votes in the advanced search (eg; most to least). You can do this as a secondary ranking option too. I know it is not quite to the scope you would like but it should offer some similar solution presuming you are using it with something like average rating?
