I really like the elf models in the last alliance box, and I don't care for the human models (at least not at the moment). So is there a place I can get just the elf models?

Try bartertown or the swapshop, you could put up an add for elves wanted.

the numenorian models are really useful to stop your elves getting killed so easily though

Usually you can get them inexpensively in groups. Then hold on to the Numenorians that usually come with them and trade them off.
