So, I've been looking at the Knights, and I've noticed there isn't any consistency.
So, it seems, like the knights of tale, they'd use their own heraldry. so, this'd mean that they'd all be different.
however:
Squire knights [Errants] wouldn't be in that position, they'd still be in the colours of a knight master.
My thought then, is if they're just squires, surely they should get a uniform, well, uniform.
Of course, it's entirely possible that they'd all be wearing the heradlry of their masters, in which case this theory is naught.
Please understand, however, I've not been able to read any Fluff lately, so I've not much of an idea of the characteristics of the Brettons.

You could do that and I think it would look fantastic. I would suggest using the same pallet of colors to tie them all together. Perhaps starting with you characters and then using only the colors they use in a simpler fashion.
That being said you should make sure to have some way to distinguish between the different types - Errants could have a unified uniform. While Questing and Grail knights (i think thats what their called) should have more detail and different symbols.
The 2 Brets players at my FLGS have unified uniforms for all of their knights. They use 2 or three colors for the majority of the model and then the heraldry on each knight is different.
Your on the right track.

I painted my knights all differently to make sure I'm not bored when painting. My peasents are painted pretty much all the same though

I painted my knights all different colours too, just to make them stand out a bit more. They are all from Bastonne(sp?) so I made sure that a lot of knights had a dragon on their heradlry. For my errant knights some have same heraldry to show they are from same family, the men at arms are all painted with the same colours, that of the duke, and all my units carry the dukes colours on their standards. The pilgrims were done in same colours as grail knight champion to show they worship him. I think it looks good (in my eyes anyway ha) but a unified teme could look awesome as well like a chapter or order. Hope that helps

Yeah that is an awesome game does get you in the mood to see large formations of knights charging into the flanks of enemies. I think that would look good, same heraldry few different patterns on the barding to give the knights some individuality. U could even make and order up by yourself, to fit into the background or theme of your army
That game actually made me make foot knights with 2handed swords and warhammers, useless for brets in game but look cool haha.

If I did Bretonians, I would make them like the Knights of Camelot from the TV show Merlin. Red and gold.

Or, you could just paint surcoats and barding in matching colors and still give each knight his own heraldry on his shield.

What I did for my Bretonnians was this:
Peasants are all but owned by the Lords of the Land, and as the General (a Duke or an Earl at the least) would have the most land / peasants, I have painted them in his colours.
Errants and Knights of the Realm are Lords or sons of Lords, so they would each have their own heraldry. Errants of course would have plainer heraldry, being the sons.
Questing Knights have given up all the honours and dignities of nobility in order to search for the Grail. To reflect this I have not painted them in heraldy, but in a unified colour to reflect the brotherhood of knight seeking the Grail together.
Same with the Grail Knights who are protectors of shrines and holy places - they are a brotherhood of Knights who have found the Grail and have been changed by drinking from it. As they have not gone back to being lords of the land, they retain a unified appearance so that all may recognize that they are the Holy Knights of the Lady.
Heroes and Lords I have painted in their own heraldry, as whether they have taken the Questing or Grail Vow they have also retained their title of Nobility (seeing as they are leading the army after all).

problem:
this isn't a medieval hierachy. while I like the idea behind it, it's slightly different:
King: duke of one land and leader of the entire nation
Duke: leader of one land.
Lord/Baron/Earl: owner of an area of land, many knights to his number
Knights of the realm: Owns small areas of land, full knight with personal heraldry.
Knight errant: owns no land, personal, if simple heraldry of father or lord in command.
Peasants may be from any level of knight, even a knight errant owns peasants.
M@A should be painted in the colours of a lord duke or something - they don't all have to be the same.
I like the idea bahind it though.
