At my local Gaming Club week after week we have been arguing about can you use more than 1 codex army not in apoc for example my friend Dave uses Chaos Daemons and Chaos Space Marines but uses 2 codex's is this legal?

Well, normally you can only play with one army at a time in games if it isn't apoc. I suppose mixing an army isn't a problem if

a) you all agree that it is fine, and
b) he uses the same force organization chart between both armies

Overall though, its ok to bring multiple armies and play different ones throughout the night. One of my best friends here at University is currently playing Tau, Nids, and Black Templars. The other two people I play with each play two, and I'll be getting a second as soon as I complete my DE army.

Currently there are a few armies where multiple Codexes are legal: IG and Space marines(individually, not together) when used with Daemon hunters or Witch hunters(these 2 can also be used together).

Also; if he wants to use Chaos Space marines apologize to him that he is forced to use "crappy" Daemons.

With Apoc any armies can be combined.

NOTE: If allying in SM or IG to either of these Inquisition armies, the use of one prevents the addition of the other.

DH/WH+IG allies - no SM allies as well.
DH/WH+SM allies - no IG allies as well.

We have agreed only likely Alliances can be made so my Space Marines and Wolves are go-go but unfortunatley he still can use Chaos Dameons,Chaos Marines but he wanted to add Daemonhunters to the lot!?

Daemonhunters wouldn't be a problem, so long as he doesn't use Grey Knights. The army would simply represent a radical/heretic Inquisitor and his warband.

technically in Apoc you can have DH(including grey knights), Chaos daemons, and Chaos space marines all on the same side(but you are supposed to come up with a really good story/fluff reason as to why they are working together).

It's all on the Apoc "Allies matrix"(sorry i do not have the book in front of me for a page reference).

Two armies is not really a problem.

The problem is combining two armies and using their special rules on each other to make some unsightly combo of mass slaughter. For example CSM and CD under one banner: the better icons (CSM) makes the better daemons (CD) very much better than they were. If you also cheat and claim you can assault the same turn you arrive (like the crappy CSM codex daemons can) it's even worse.
