If my Knights of the Realm had a leadership of 8, and I lost 3 Knights, making my leadership value 5, would I use the new leadership value for the next turns?

I think you seem to be confused about how leadership works. It doesn't drop with each model lost. Perhaps you got a bit lost in the combat resolution section?
There are certain magical effects that will reduce your leadership, and combat resolution will make you take your break test at a negative modifier, but your leadership should remain at the default of 8.

You only care about number of models lost (or rather, total combat resolution) as regards modifying your leadership when you are in close combat.
In close combat if you lost the combat by 3 (which could be by losing 3 knights, for example) then you would take a Break Test, which is a Leadership based test modified by the amount you lost combat by. So you would take it on Ld(8-3)= Ld5.
However this is a modifier for THAT combat resolution ONLY - it does not stay at Ld5 after that poiint. So if you break from combat and attempt to rally you can do so by passing a Ld test on your normal Ld of 8.
