This is my first attempt at a proper army list for my orks which i'm currently working on.
All feed back and suggestions are much appreciated.

You NEED a PK on the Warboss. Take off Big Choppa, heavy armor from him, grot oiler, heavy armor from the mek, and a boy to give him this.

Also, are 3 suicide kopta units too many?
Are the grots a waste of points?
I have next to zero experience with orks... That's why I'm asking.

I don't like the single Trukk unit in this :(
Will it ever achieve anything? Especially in kill points, it will be gone immediately i would have thought, and 12 boyz will die far to quickly unfortunately....

I reckon what you could do, is take out that unit, give your Warboss a Powerklaw, add an extra Nob or two, and then a couple more upgrades on the battlewagons (like Grot riggers/red paint job etc....) It might make it worse, but I just don't like the trukk unit on its own....

Except for the lack of a Klaw on the Boss, I like it. The Boss does need a Klaw. The list cannot have the seal of approval without it.

I think the Big Mek with KFF is 85 pts not 80. Other than that I like the list. I noticed you were wondering about too many suicide koptas. 3 is great but if you feel like switching it up in the future try adding lootas instead. I like the koptas though

Big Mek with KFF is indeed 85; otherwise, it's a nice list.

Lootas are useful, and five are about the same points-cost as a Buzzkopta. Both are pretty good units, both will sometimes fail miserably. It might be worth having both to use and trying different combinations to see what you like best.
