So after getting a taste of IG, and playing Soulstorm, I've decided to to possibly make a switch to Sisters of Battle. I really don't know the specifics of fielding em, so How can I field a SoB army, and if I do, what are good choices for a quick 500 Point army list?

Well, believe it or not, they work a lot like space marines. They have basic unit types like jump infantry and heavy weapons, as well as transports (You have the option of either rhinos or chimeras, usually) and heavy pieces.
SOB armies usually complement their best features, which are their tanks. Exorcists and immolators are arguably the best variants of the rhino chassis, and SOB can take land raiders as well.
They also feature probably the best melta/flamer access in the game, with every unit being able to take SOMETHING worth while. In that respect, they're pretty good tank hunters. Sob are really just guardsmen with a 3+ save and 4BS, so don't treat them like marines. Think of them as veterans. Thinking of them as space marines is the key to failure with them. But that's contradicting that "they work like space marines" , I know.
SOBS are really cool, and I encourage people to play them. It's sort of like the step in between space marines and IG.

The current rumors are that the sisters will be updated in the forseeable future, so I'd hold off on them until then. The current models are also butt ugly and are rumored to be getting plastic replacements.
Organization wise, think of them as a cross between Imp Guard and Space Marines. You'll be relying on Exorcist Artillery Tanks more than the Immolator, and you have cheaper troops. However their unit selection closely mirrors that of a fire-based SM army, with NO access to other weapons (so meltas and flamers galore). Everything else upgrades and largely plays like a horde version of SM.

The Witch Hunters Codex is available for download form GW's site if you want to see the army out a bit.
In terms of starting the army though, I'd advise you to hold off since there are a few strikes against it:
Sisters are all metal all the time. Not the end of the world for me, but I've not been tempted to convert any Nuns with Guns yet either.
Most of the army is direct only or close to it. You'll find some stuff around eBay and shops, but a good chunk of the stuff has gone to direct only (at least up here). It can make tracking stuff down tough. I managed to find a bunch of Sisters boxes at the Dragon's Lair when I was in San Antonio. Those definitely made it easier to build the army. I'm still hunting round for special weapons to fill things out and having to buy the tanks direct. It's made filling my slots more expensive and challenging than I'd anticipated.
The book is just old. Yes, you get Nuns with Guns and Acts of Faith and full board Psychic Hoods and other bits and pieces. You also get 50 point Rhinos, wargear that doesn't do anything and some oddly costed units. Pretty standard with the old books. More something to be aware of there.
Just my two cents though. I'm currently working through the army and surviving, but if I hadn't found those boxes when I was in Texas, trying to field a descent sized force would be pretty problematic. If I were forced to stick to blisters for bolter Sisters, I'd likely be laying the army aside or selling it off.

When using them you also have to keep the acts of faith in mind. Also while the codex can make an Inquisitional force, I recommend only doing pure SoB if you want the WH codex.
They are short to mid ranged, the Heavy Bolter generally being the weapon with the most range. However like mentioned it has some odd wargear. One piece you will enjoy the first time you use it is the Book of St.Lucius. For 5 points it basically makes the unit stubborn. Combine this with the Spirit of the Martyr act and any unit can become a decent tar pit when needed.
I'd also advise against the Seraphim and the Repentia. While the Seraphim can occasionally work out quite well with the Melta weaponry and their own version of Hit and Run, I'd prefer to get a normal squad of SoB in a Rhino instead. But, that's just me. The Repentia however actually are quite terribad.

Since the current models are all metal, made using degrading moulds that have been in use since the 90s, and cost about 50 pounds per squad without any hope for a discount, I'd definitely recommend waiting. We're hoping for a new codex and new plastics later this year, and that's when I'll be getting mine.
As for the current codex, both the codex itself and the update for IA2 are free to download: the IA2 update gives the SoB cheaper Rhinos and the Repressor, a riot tank with a ton of fire ports.
