As the title says, a quick question: What paints should I use? My colour scheme is basic boltgun metal with blue on the spine and backs of the hands in most cases. I'm specifically concerned about the flesh.

The 'metal' bits should match your normal warriors.

For the fleshy bits, any fleshy colours, then wash with reds and browns. Continue the washes onto some of the 'metal' bits, to simulate blood splatter.

Actually, I would avoid washes for this flesh. Its really flat and will give you a glossy color which will blend with the shiny metal giving you a boring piece. Start with a white base, paint dwarf flesh and try to wet blend on the high raised areas all the way up to elf flesh. Line the edges with red gore/blood red, changing colors where light would change when shown on the blood as if the sun was right over head.
