So, a friend and I were discussing the vehicle rules and it seems that they cannot reverse by the rules which seems to make it possible to stop a vehicle in its tracks with another vehicle - I will use a drop pod for the example.
The only time a vehicle can get within 1" of an enemy model is during the assault phase if it is charged (or has a holdover from a previous turns charge) or when it rams.
A vehicle that wants to move simply pivots on the spot and moves.
If you have another vehicle (infantry can simply be tank shocked) at 1" to the front of the vehicle it seems to be locked in place until that vehicle is destroyed since the pivot will take a part of the vehicle to within 1" which is prohibited.
Is this correct?

pg 57 BRB "...a vehicle may combine forward and reverse movement in the same turn provided it does not exceed its maximum move."
So, no you can't pin in a vehicle as you described.

In addition they follow all normal "infantry" movement rules, as this is granted to all models.

Yup. They can move in reverse as well. I think technically you could pin a vehicle in by putting a pair of units exactly 1" away in the front and rear, as to pivot one of the fenders (on a rectangular vehicle, like most of them) would have to come within 1"; but I've very rarely seen anyone play that way.

I do not think there is an written restriction disallowing vehicles from moving sideways.
Or did I miss it?

As I pointed out - the vehicle rules do not strip normal infantry movement rules from you, it just adds additional rules which do, effectively, nothing. So you can move sideways as infantry can do so...

Ah okay cool, I missed the reverse line thanks. It was feeling a bit sketchy.

The only thing I've ever been able to find was in the movement section where it says "a vehicle may combine forward and reverse movement in the same turn..." which you could argue either a) sideways movement is not specifically stated, and is therefore illegal or b) it IS legal to move sideways, but cannot be combined with any other movement (because it's not expressly included with forward and reverse movement).
Either way, while a bit silly for tracked/wheeled vehicles, I personally wouldn't require anyone to pivot their Valkyrie if they wanted to move it sideways.

it comes into play more if the vehicle will be passing over difficult terrain in its movement. such as a tank is facing your gun line and wants to move to the left. If you allow sideways movement an opponent could move a vehicle across the terrain and keep his front armor facing you even if he was immobilized early in his movement, while if he had to turn like a real tank he might have to expose his side armor if he gets immobilized.
I personally follow the second "real tank" movement scenario
