I did'nt know what forum this would come under ..

But how do platoons work , do they have to all stay together ?

im guessing vechiles squadrons work like normal squads

But does one platoon take up 1 troop choice ?

Platoons are just a special way of choosing squads. Basically it allows Imperial Guard to have more than one squad per Force Organisation Slot Choice. It's just a fancy way of saying "If you want any of the stuff listed here in your army, you must by a Platoon Command Squad and two Infantry Squads first. You then get this many of those choices. If you want more, you have to buy the Platoon Command Squad and Infantry Squads again". One Platoon counts as a single Troop Choice, regardless of what it consists of (so you could take one platoon with a Platoon Command Squad and two infantry squads, and another Platoon with everything filled out, and both will count as a single Troop Choice each).

You can also take veteran squads which do not use the platoon system.

Veteran Squads are a completely different Troop Choice and is not under the Platoon system.

You're going to want the guard codex anyways. Not only are there rules in the DK codex that don't make sense without the guard one, but after playing a couple of games where your infantry blobs have a dozen hidden powerfists at Ws4, you're probably going to find it difficult to find people willing to play against you.

DKoK is way up-powered compared to regular guard, and you need your opponent's permission to field it. Sooner or later, you're going to have to run it as a regular guard army with awesome models.
