When entering, leaving, or moving through dangerous terrain, you roll for each model. Do you make a roll again for each model in the shooting phase if you run with the unit? Do you roll again for assaulting and the defender reaching? What about the pile in! move or consolidation? If you don't move in dangerous terrain do you still roll to see if there are any casualties?

Yes - each and every phase. However if you read defender reacts and pile in you will notice they ignore difficult or dangerous terrain, same for consolidation.

If you dont move you have not "moved" so therefore cannot take a test.

Note that normally dangerous terrain is once per phase, but, for example, jump infantry moving as jump infantry leaving difficult and entering difficult (which is dangerous to them) would take 2 tests per model.
