From where I stand, it seems that a lot of Texas has settled in to 2500 points as a standard. On the other hand, we've been running a Tuesday night mini-tournament series to change things up a little, and it's been kind of fun. One outing was set to 1800 points, which made things interesting and made you re-evaluate your list.

2500 is the standard these days due mostly to dragons and other big mounts. You simply cannot take a dragon on a tooled out lord, for DE for example, in a 2000-2250 game.
A maxed out DE dragon lord runs about 580 points which is over the 25% allowed for 2250 games.
Now I consider 2500 a full sized list. This is the list that I build my purchasing around. I then write smaller lists using the models that are in the main army.
Most of the games my wife and I play right now are about 1500 due to me having to finish up a few units such as her dragon and my pain in the ass phoenix guard(pinning 50 hands is uber fun).

2500 point armies already retail for about $500. No one needs a 5000 point army.
3k is more than enough for huge games.

As a casual player, I start getting really itchy if I see points creeping north of 2500. I generally try to get a 2000 point force together so I can get a nice balance of all aspects of the game, and maybe sneak in a really cool giant or dragon (or a giant riding a dragon!) as a showpiece.
On the other side, anything below 1500 tends to be an oversimplified scrimmage. Nice way to burn an hour or two, but not the kind of thing that'd draw me in and make me chew nervously on my flexy red measure stick between phases.
So I would put the sweet spot at 1500-2500, with 2000 being the perfect balance for me. Enough points that I can get a nice selection of units, but still restrictive enough that I have to think about my lists and wargear.
I do, however, love skirmishes and small warbands scenarios. But I consider those to be more akin to Mordheim than Warhammer.
On a related note, I've noticed a lot of BIG points battle reports lately. Is it just me, or do the deployments of all those look roughly the same? "I built a solid wall of units from the left side of the table to the right, with about one inch between movement trays. On the opposite side of the table, Bob put his catapaults on the hill in the middle... and then crammed a solid wall of units from the left side of the table to the right."
Personally, I like to have a enough space left after terrain and deployment to make me think about how to move rather than being funneled straight ahead.

2400-2500pts is a good sweet spot, it lets you use most units including Dragon type heroes which you can't squeeze in anymore at lower points limits. However I definitely would avoid playing at 3000pts for the most part, its essentially the start of a new force organisation and you can get some hideously unbalanced lists at exactly 3000 (think 6 Cannons and Mortars). If you want to play are bigger game I would suggest playing 4000pts or so to cut back on the min maxing possible.

Large games like that are best played with teams in my experience.
Back in 6th edition I took part in a 15 hour 16,000 point game of 4v4. One of the best games I've ever had, despite my performance as a noob in both the game and tactics.

I like 2000 points, because it allows me to put a good collection of units in my army, while still forcing me to make decisions about what I put in my list. It also makes the game much more army-based by removing Dragons from consideration.

I know, i did a 6k game once. 4 players, each with 3k. it was 2 Ogre players vs a DE Lizardmen alliance.
