So I might be able to catch the last day of Adepticon, since it's so close to me. I'm 2 hours from Chicago, and I might be flying into Chicago that weekend anyway from another trip to DC. I looked over the website, but didn't find the answer to this question. I heard sometime before the last Adepticon that there are (informal? or organized?) bitz/model trading/selling/buying etc. Am I crazy, or is this true? And if so, when does it go on?

You are correct. There is an organized Bitz Trading sessions Friday and Saturday night starting at 10PM (full event schedule can be found here).
So there isn't anything organized on Sunday afternoon, but informal trading goes on all weekend. Additionally, the Game Room will be in attendance with a boatload of bitz. I believe they will be both buying, selling and trading all weekend (even overnight) long.

Hmmm, time to break out the warchest I think, and see how many teef I can bring along. I haven't gone on a big army and bitz buying spree for some time. And I'll be driving out with a van, so no problem filling it up for the ride back.)

so if i just showed up, and had some bitz and stuff, and looked around, i could probably get some wheeling and dealing done on Sunday? (or possibly Saturday night?) i wish that Adepticon weren't going on the same weekend as an important academic conference in DC!

Saturday night for sure. Bitz trading will happen from 10PM through Midnight. Saturday night is the biggest/busiest night for bitz trading/selling.
Sunday will be a little tougher, although I am sure there will be opportunities.
