hey could you technically use just a single one of those units as a troop choice in normal 40k?

Datasheets are for use in Apocalypse games. Normally tournaments restrict players to using units from their codices.

Of course, if you and your opponent agree, you can field whatever you like.

There's a pretty good way of telling if a unit from an apoc supplement is supposed to be used in a codex army - it'll tell you what FOC slot it is.

For example, Grot Tanks are an Elite Choice in a Codex Orks army.

Since plague zombies aren't assigned to an FOC you can't select them for a codex army list.

Which, of course, doesn't stop you sorting out a houserule for them.

Technically no. Find a friendly opponent though, and I'm sure they'd have no problem with it.
