Im pretty new and I could not find the answer to the following.
Can you take a unit with a dedicated transport, and reserve one while deploying the other onto the table?

Yes. There is no requirement to deploy the unit in their transport, nor is there anything the requires you to deploy the two separate units at the same time or in the same manner.

Unless it says otherwise in the codex. The older codexes are a lot more restrictive on who can use the transport and how.

I'll have to look up the Witchhunters codex and see if it allows you to do this. It just might

There has never been a codex that required a unit to start the game in their transport.

You're possibly getting confused with older codexes which only allowed the owning unit to ride, which is now mostly changed over to 5th editions 'at the start of the game' restriction. I think Daemon Hunters are about the only codex that still has the old dedicated transport rules.

I never said that it did, just that the older codecii had different rules for dedicated transports, and that I was going to check to see

Putting a transport into reserve but the squad on the table can be a smart move in some KP game matchups.

Starting a couple of transports on the table with their rear hatches within 6"- 8" (depending on the size of the unit planning to embark) of the table edge can be a very smart play in Dawn of War.
