Can you do either of these winky things? I would see assaulting into combat how the models would get it but not the turns after how about plasma grenades is that only for initiative purposes? Can my guys in a forest/ Jungle get shot up?

Cover saves are not allowed in close combat. You can only take armor saves or invulnerable saves (unless restricted by the attacking model).
You are allowed to shoot models in a forest or jungle. These are almost always considered area terrain, so a cover save always applies (unless against a weapon that ignores cover). The only restriction is True Line of Sight. So, if your forest is sufficiently dense to block LOS, you cannot be shot. To determine, you actually have to check if the firing model can see a target model.

Offensive grenades stop your initiaitve from dropping when you assault into cover. If you dont have grenades, but assault into an existing combat then there is no initiiative penalty at all - the enemy is preoccupied beating up your friends
If you are *accidentally* hit by shooting while in close combat, then any cover saves that would normally apply DO apply - you only dont get cover saves against close combat *attacks*, i.e. people thumping you over the head.

what about against barrage( ig) shots no los needed right ? What if the models shooting are in a forest themselves ? shooting at a unit in a forest from a forest, I would argue that they couldnt see through both terrain together
|

Barrage - cover works differently
Barrage you work out if the unit has a cover save based on where the centre of the blast marker is. If you end up dropping a shell in a piece of area terrain, such as a Ruin, then there is ALWAYS cover between the centre of the blast and any models.
You may "argue" that they couldnt see through two pieces of terrain, however that is only true if they ACTUALLY cannot see through both. Get a laser pointer - if you can shine a light on your target from your firing model, you can shoot. Simple as.

what if you are counting barren trees as forest/jungle.. house rules then?

My understanding is that if you've chosen to treat something modeled with barren trees as a forest or jungle then you'll get something that provides cover saves like a forest/jungle but provides LOS restrictions like the few scraggly trees that are actually modeled.

Not sure wha tyou mean here.
If they are trees, they are actual trees whcih block LOS as a normal object would, and you work out cover saves based on actual physically being obscured by the tree. If they are "forest", which means they are Area Terrain, they then follow the rules for area terrain. This is not ideal if it is a lone tree, as it has no "area" to delineate...
