They would.
Where are you planning on playing with them?

In a GW store, full non-GW models probably won't fly.
(One or two figures is probably fine. Recognisable chunk of army - probably not).

I've got Pig iron bits in my guard army and I use their Ironsides as my tank hulls - but as I don't play in GW stores (the local one is barely large enough to skin a cat, let alone swing it) and the only tourneys I play in are also not run by GW, and I've had no issues (except from a couple of people who swallowed the "GW is mother, GW is father, GW IS the hobby" mantra).

Give them GW weapons, equipment, maybe heads too and they may see them as acceptable as they are made up quite a bit of GW parts.

A word of warning; Codex: Grey Knights effectively killed daemonhunter inquisiorial armies. When Witch Hunters gets redone it seems probable that "Witch Hunters" won't even exsist as an army anymore (There are Witch Hunter units in the GK codex). The new 'Witch Hunter" codex will likely be pure Sisters of Battle. Alot of Daemonhunter players are finding their whole(non-GK) armies invalidated and are very upset about it. So after Witch Hunters gets redone it may no longer be possible to even do a pure Inquisistion army.

The new SoB will likely be more like its second edition version.
SoB and ecclesiarchy units.

So Sisters, preachers, perhaps a return of the frateris militia.

The inquisitors and retinues have been moved to the GK codex. =I= Stormtroopers will be no more (and probably the arbites too).

As far as the models go, they look great, go for them! And the fact that the guns *don't* look like
Lasguns is a good thing, because the Witchhunter Stormtroopers use Hellgun's with Targeters, which
having the old Metal ones, those weapons look pretty good for.

As far as the Grey Knights / Witch Hunters / Sisters of Battle issue... yea thats a toughy. My wife has
almost 3,000 pts in Sisters, and I ended up swooping in and snatching up all her Inquisitor stuff since
she wanted to do purely sisters. But with the new Grey Knights codex, all of the Inquisitorial stuff went
into them. Its awesome stuff, but they removed all the IG stuff you could take, and the automatic
ability to join forces with either IG or Space Marines (understandably... ). So I ended up trading off
all my Inquisitor stuff for more Tyranids. Now I'm just stuck with abuncha Guard stuff and a Leman Russ
I'm not sure what I'm going to do with.

I'd almost recommend waiting for the new Witch Hunter's codex (if/when its released) as unfortunately,
I've found that the old codex just doesn't hold up as well in 5e, especially with the power creep and how
awkward some of the rules in it work in the new environment. Also, some of the point costs vs. stat lines
and gear just feel ...'off' and I find the Witch Hunters extremely hard to play outside of just messing around.

Anyway, hope this helps.

I'm a fan of Pig Iron and WF greatcoats, so I'd have no problem playing against them. I suspect that most players wouldn't if you took time to model the weapons reliatively WYSIWYG.

For a GW store or GW tournament, they'd be a no-go, but if that's not a concern to you, I'd say go for it. Also, if you go with the WGF figs, consdier really customizing them with Pig Iron heads.
