Everything, buy absolutely everything. It's the only way to be sure.
Why don't you just buy the codex and read what everything does instead of letting strangers on the Internet tell you what to get? If you look through the book you'll find units to fight just about anything.

SRM's right. Plus most of us dont have the codex handy either, so we cant really give you much concrete advice.

In terms of what you should buy... there are only two options.
Grey Knights in power armor
Grey Knights in Terminator Armor
Buy some of each and about a million magnets. Then Magnetize Everything! All of the different guns and close combat weapons. That way you can take whatever you want and it will still be WYSIWYG

Do you even need to magentize the PAGKs? Their weaposn are pretty straight forward.

Lucky for the OP, there are basically 2 boxes that cover the vast majority of GK infantry. PAGK and TAGK in units of 5. Chances are very, very high that you will be buying more than 1 box of both.
But seriously, actually read the codex before asking what to do with the army.
