Below is an 1,850 point Ork mob list. When you look at it, you will see that I'm not the uber-competitive type. This is for fun (obviously, I'm taking a SAG).
For my own education, I am curious in how you would beat it. I'm not talking about list-smithing. I'm talking about your 1,850 tournament list. If you had to face me, what would you do?

Obviously, the Mek with the Kustom Force Field joins one of the mobs and the mobs are then positioned in such a way to provide them all with the 5+ cover save. They simply run forward to get into close combat and allow the klaw to work on vehicles.
The other Mek with the Shokk Attack Gun gets attached to the gretchin and they sit back and watch the battle. If he shoots himself across the board, then he has a klaw to smack some armor with. He's got a boss pole to keep the gretchin around in case we fail a leadership check.
The Lootas are simply a harassment unit. D3*15 S7 shots. Yeah, I'll miss alot, but it's the perceived danger I'm going for.
The two Deffkopta squads scout move to get their 3+ save, then just harass the snot out of my opponent. They have a good chance of getting side armor shots with their twin-linked S8 Rokkits. I put them in squads of five for, again, the perceived threat.
The whole idea is to get my opponent shooting at everything else but the boyz. And if they don't, then everything else will tear them up.
So, with that said, list your army and let me know how you would deal with it. It's up to you to chose the mission or describe how you would deal with it in all three missions.
This is for education purposes. I started playing Orks because my Mech guard list kept losing to them. It's the Batman reasoning: I became what I feared. Hopefully others can learn from your wisdom.

I'd probably smash my two Deffdreds and Kanz into your front lines, keeping the Big Mek with KFF behind them to give 'em cover from the SAG until they're stuck in, and running around repairing any Weapon Destroyed and Immobilized results, while my Boomstompa (Gunwagon, with Killkannon and either Rokkits or Big Shootasx4) attempts to rain death on the not-fightin' mobz, maybe trying to peg the SAG Mek or Lootaz.
20 strong 'Ard shootaz would probably camp home objective (if there is one, otherwise they're joinin' the scrap), hopefully in cover. They'd try gunnin' down the Koptaz.
My Tankbustaz would be having a hell of a time, popping Rokkits at your Koptaz, maybe trying to move around and do some damage to the lootaz.
Depending on my mood, I'd have either 6 strong Nobz wiff all the trimmings, led by da Choppaboss, Battlewagon around the fray to try and Tank Shokk your gretch and Big Mek off your objective, and just generally cause mayhem. Or they might be Meganobz and a Megabozz, once again, depending on my mood.

GENERATION 8: The first time you see this, copy and paste it into your sig and add 1 to the number after generation. Consider it a social experiment.

I think my 1500P Orks could beat this.
The Kan wall would crush you then to top it off have my Deff Rolla and Meganobz with mega Armoured warboss romp all over the show.
Only worry would be the SAG but you've got just as much chance at blowing yourself up.
My only worry is you have a hell of a lot of PK's.
If I added the 350P on top you would be killed.
I also think GK would kill you. Purifiers and Tanks and a Vindicare would win.
Purifiers and tanks need no explanation that and I think the Vindicare picking off your PK's might be anoying.

QFT. Most basic tactic against Orks (and other horde-like armies) is to bring lots of templates. As a Space Marine player, I'd probably take Razorbacks with TL Heavy Flamers for my Tactical Squads. Outfit the Tacticals with Flamers, Power Weapons, and Missile Launchers. I wouldn't bother bringing many Fast Attack choices, save for maybe Bike Squads with 2 Flamers. Elite choices would be any mix of Sternguards with Combi-Flamers and/or Ironclad Dreadnoughts with 2 HF's. If I bring Terminators, they'd be most likely in a Land Raider Redeemer with a Chaplain in Terminator Armor, with his own Combi-Flamer. Heavy Support options would be Vindicators and/or Whirlwinds. If I'm list catering, which I generally do NOT do, then I'd probably bring a TFC instead. Usually I don't play them, but against Orks, they're amazing.
Also, I've played against Orks enough to know what a "perceived threat" and what an "actual threat" is. And I have to say that most experienced players will probably focus on the "meat" of your army rather than the "potatoes".

Hmmm with my Guard I'd use Manticores to whittle the Boyz down while multi lasers go long range at the Lootas. Once you've come close I'll move unleash hull heavy flamers so no cover saves  along with a torrent of whatever I have in the transports. I'd I.D the Deffkopters with Vendettas, should wipe out a unit a turn with luck from both Vendettas.
Against Angels Vindicators would be my strong points blasting away but that's all the templates I have so if you tackle those I might find it steep. I'd las/ plas the Deffkopters forcing morale on them and run off, the Boyz I'd drive up unleash plasma torrent and wait you you assault or I can get close and bail out the transport blast with flamers and charge with furious charge and feel no pain
With my own Orks I'd laugh as you have practically nothing which can do my armour 14 over. I'd use my own Lootas against your Deffkopters.
Lastly, Tyranids, I'd outflank Genestealers onto the Loota positions. I'd use Hive Guard to I.D Deffkopters force morale on them and run off. I'd swamp units with poison furious Termagants with monstrous creature support and I would focus fire devourers onto a single unit which should make them run away, hopefully.
Of course, tactics are always sound buit dice rolls are a different thing

I would use my deffrollas to tank shock/deff rolla the hell out of you. And those big units of 30 orks die to my burna wagon real quick.
My lootas would make short work of your deffkopters not mention my mobility means that I can pick my fights.

Lots and lots of flamers. Heck a drop-pod vulkan flamer spam list would cause an inferno to this list. Kantor and some sternguard with heavy flamers, toss in an Ironclad, and yeah I'll have that list on fire

since its a fun list i'd counter with flluff
a 18050 with old zogwort and mad doc.attached to some komandoes with snickrot, then a hoard of boys charging at your boys and maybe some grots and kannons on objectives shooting into yout hoard.
there really wouldn't be any tactics it'd more be a lets have fun and smash two ork armies at eachother

I would play my Salamanders with Sternguard and Tactical squads totting excessive amounts of flamers and Heavy Flamers that are all twinlinked thanks to Vulkan, and I would back it all up with 10 TH/SS terminators and maybe a Thunderfire Cannon or two for good measure.

some people ar emissing the point, i don't think he is asking how you'd build a custom list to beat it, rather how would you beat it with your EXISTING 1850 non custimised for facing his list

Anyone can build a anti-horde list. The question is would you bring that list to a tournament?
What type of list would you bring to a tournament and what would you do to counter this list?
This is a good mental exercise for anybody. Come up with your list, then ask others what tactics they would use in a game against it with their own all-comers list.

Vulkan and the MotF go in the Pod with the Sternguard and drop down for 4 Combi-flamer hits, flamer from MotF and 3 Heavy Flamers all Twin linked. This unit roasts pretty much any unit it hits so it is versatile against any opponent. The Dreads have both AT and Anti Horde. The Termies hoof it since they don't need cover and act as both an assault deterrent and an effective unit to draw enemy fire.
Yes, I own the models for this list and have used it. It works well and is competitive still.

In Pitched Battle it would depend on who gets what turn and mission type but more than likely I'd castle up on the opposite corner and spit death until you're just ready to smash my lines, when you're within a certain range I'll disembark my melta grey hunters, double tap and multi-assault the whittled down Boyz mob with a larger one to use combat resolution to its fullest, between the double taps, some assault cannon, maybe a living lightning and the assault I should easily take down all 30 boyz from the first units (about 10-15 will die in combat) leaving you with 1 boyz squad dead, another probably right under 15 and your other Boyz being harassed by various methods.
Other options are to mount a priest with the meltas and use hurricane to slow down mobs and make you take 20+ dangerous terrain tests as a way to pick and choose my battles.
The Deffkoptas would be the only targets for my Lascannons and missiles so that's first priority as they'll be annoying moreso than the boyz. Once they're done, it falls to maneuvering and target priority.

As a csm player and in the spirit in which this was posted it would look something like
2x dp lash
2x3 termies, hf,
dred tl auto
2x5 csm flamers
4x7 zerkers or so
2x vindicator
1 defiler
Kind of competitive but still pretty fun and with a good chance of getting pasted.
form up in refused flank, the dps hide behind vindis, csm zip out to tar pit your boyz, zerkers smack em on the countercharge, dps lash and demolishers and battle cannons do what demolishers and battlecannons do best, termies deep strike on lootaz, dred is all purpose template/assault. I didn't calculate points, just guesstimating that's about 1850.
