So for the Court of the archon, Can you get a mix of the different types? Or can you only pick one type and stick with it? I have seen some people mixing them up, and not sure if theyre just not sure or im just missing something.

You're actually obligated to mix them up - each of the individual units has a min/max number in the entry in the DE Codex (pg. 84) the chart tells you how few and how many of each type you can take.
