Would a mechanized army that heavily favors Deffkopta's and Bika's be effective? The boyz would be mounted in Trukks or BattleWagons (Probably Wagons) and everything else would have toughness five. Fast and resiliant. Is that unrealistic for the points? I would like to know before I drop tons of money on those units.

It isn't unrealistic. You'll find that bikers are generally considered poor choices around here, as you can get more for comparable prices. That said, they do have a certain synergy with a kult of speed list, as they can screen your battlewagons and tie up enemy shooting troops.

If you do plan to take a lot of bikers, either take wazdakka gutsmek and make them troops, or keep them in multiple small units as more distractions and anti tank. This is simply because when the bikers start taking casualties, if they fail leadership, that is a lot of points that just sped off the board.

Or, yaknow, you actually find bikers work and are awesome for what you get Your idea strikes me of my army actually that I run, with some decent results (I say decent, I've not won yet and I don't play in tournaments). Bikers and trukkers. While gpfunk mentions Leadership, I have little issues with it. That 4+ cover save I abuse the snot out of and it saves them almost every time. Remember to have a Nob leader with PK and BP just in case. Having a good armour save can help prevent the unit running out of wounds fast, and zooming them into combat is where they work best. Trukker boyz meanwhile - you need lots. I run 4 and it's not enough. 5 is probably a good number, but more the merrier. Full squads of 12 with Nob leader, PK/BP. Consider some Rams on your trukks and whizz them in. For a HQ, PK boss for tank smashing, Ghazz if you want a really good chance of hitting CC, or a KFF big mek for a sheilding on the first few turns. I personally tell people not to take koptas since they're not worth what people want them to do IMHO and bikers do it just the same, if not better.

If you've not won yet, then wouldn't those results actually be "bad"?

If you want to take it that way, yes. I don't since the guy I fight against is, well, very good at being a tactician. None of us in our group have beaten him and he's playing Deathwing of all things, footslogging too. We gave up counting losses ages ago Besides with my current orky list I've nearly got him twice. In both matches I made a silly move which cost me the game so.
