So, weapons with destroyer get +1 on the super heavy damage chart, and weapons with AP1 get +1 on the standard chart.

Am I right in thinking that destroyer weapons get a +1 on the standard chart as well, as the rule does say "when rolling on the appropriate vehicle damage chart"? I am already pretty sure that AP1 weapons don't get the bonus on the super heavy chart, although I could be wrong.

As a last point to ponder, do open topped super heavies get a +1 on their damage chart? I can't recall any existing, but I imagine that they would.

Normal vehicles are at +1 when dmaaged by a Destroyer. AP1 now also affects superheavies - IA Apoc 2

Yep, open topped SH are at +1. Treat everything the same as far as calculating the result on the damage, and then use the normal or SH damage chart.
