When you deep strike a stormraven, you can shoot one weapon but can you shoot your hurricane bolters cause they are a defensive weapon.

You count as moving at Cruising Speed. You can shoot as many weapons as a Fast vehicle moving at cruising speed can normally shoot. (+1 for PotMS)

I'm still lost on that rule, so if I had plasma cannon and hurricane bolters am I able too shoot both.

Fast vehicles moving at crusing speed can fire one main weapon and any defensive weapons. Defensive weapons are str4 or less (or otherwise labelled as defensive).

So the storm raven can fire one Main weapon all defensive weapons (i.e. both hurricane-bolters) and with PotMS it can fire one additional weapon (even at another target)

Why are you lost on the rule? Page 70 explains it VERY clearly.

You can fire all the weapons a normal Fast vehicle can at Cruising Speed, PLUS one weapon (of any type) due to Power of Machine Spirit.
