So, I'm jumping ship from GW and KoW looks great. Like a really streamlined WHFB, with dirt-cheap minis.
Anyway, I love the look of the undead models, so I've drawn up a 1500 point list for them that i'm looking for advice on.

I haven't played too many games, so I can be wrong, but ever time I've taken the catapult it has failed to deliver for me. I'd run one or none, and add in wraiths to harass your opponent on the flanks (deploy them last, put them in good position to tear apart your opponents weaker side), and it gives you enough leftover points for a standard bearer to hide behind your hordes

Your list needs more variety.
Skeleton hordes with spears and undead dogs are a good choice, but with 4 of them as your army and only a single caster to support them, they will get taken out by shooting before they can reach the enemy line, or arrive too damaged to hurt it.
Also, having 4 big units and nothing else will just leave you open to being flanked since the enemy will definitely have more units than you (and will also be faster than you)
I'd recommend more necromancers to hold the army together and maybe some faster units like ghouls, wraiths or cavalry to go ahead and tie up missile units.
Adding zombies to soak up missile fire is another way to keep your more expensive units intact.
In general, you have to think about how the units are going to work together as an army, spamming a single unit that seems powerful on paper doesn't work out so well on the tabletop.. that's the approach you have to take to writing army lists from Kings of War.
The points costs in the army lists are well-balanced, so instead you have to picture how you want your army to play on the field, then design a list that supports the tactics you have in mind.

A list I was thinking for Undead is:

3 Necromancers should allow you to cover your units with reasonable healing ability. Two zombie regiments require splitting of fire to slow their advance considerably.
The skeleton regiments could use dogs, and the horde might not need them. You could drop one of the catapults and the dogs from the horde unit to grab the regiments dogs instead, and then you have 50pts left over for the return of the banners to your skellies.
Wraiths can be useful flanking units, which whilst lacking any real punch on their own, could be used as swift distractions (with a solid defense) and can hunt smaller ranged units like opposing war engines or ranged troops.
Balefires don't look amazing, but they should target smaller elite units with higher defense. Piercing (2) means that even the toughest units will be getting hurt, and whilst only having Ra 6+, whatever damage you cause to smaller units will hurt them considerably, especially since they usually have low nerve values.
The list focusses on wraiths negating war engines and ranged troops, the balefires hammering the smaller units such as cavalry, monsters or hardy units such as dwarven Ironguards, Abyssal Immortals and Orc Gore units and Fight-Wagons.
The zombies draw fire and provide a barrier for your skeletons, who target units bogged down by the zombies, or can pass in front to charge as the zombies protect the flanks.
It's probably not the best list, but it has a variety of units with jobs that compliment the army as a whole, which is what you should be aiming for.

Revenants are your screening units and also heavy hitters. Since they hit on 4s and can only be damaged on 5s, they're a nice damage dealing unit and are also very hard to damage.
Calvary are faster moving Revenants that are also resilient and meant to tie up missile units.
There's a lot of Necromancers in this list, meaning that a lot of your units will be healed or pushed forward quite a bit, providing some speed to the army.
Balefires aren't so hot, but they're taken for the necessary long range support as Avatar has mentioned.

^ That list looks pretty good, although with the revenant regiments and cavalry watch out for your opponent focusing their fire or combat attacks and wiping out the unit before you get a chance to heal it.
As long as you keep things moving, the list should be workable.
