Personally, these ladies are my favourite bit of the 40k universe.

It's an odd position for an Imperial Adeptus, where compassion is turned into a strength, rather than looked on as a weakness. Working in refugee camps, helping the sick of the under-hives, acting as medics to other Sororitas and their darker assignments to the Inquisition all interest me.
So far the only bit of solid information I can get on them comes from the, far too short, excerpt in the WH codex. Is there anywhere that the Sisters Hospitalliers are researched in more detail?

Particular orders and their structure?
Are they held by any sort of mission or do they go where they are (medically) needed most?
Just what do they do, are there any pieces of cannon where they feature heavily?

Mostly Dark Heresy. The Tranch Wars have one notable fluff examples-- they had taken the las and autoguns of their patients up to defend the hospital, and easily repelled the attacking forces with them.

The fluff mostly ignores compassion because most of the focus is on the battles. But there are indications here and there that compassion and charity toward humans is something that some lower ranking members of the Ecclesiarchy engage in.

The Hospitallars are the only organization dedicated to something along those lines that's been mentioned to date, though.

Not even all Battle Sisters come from the Schola Progenium, potentially any woman/girl can join the Sororitas, the Schola Progenium however porvides indoctrinated, trained and hand picked individuals.

Ditto.

I was under the impression that all Soroitas start from the Schola Progenium, and the sisters that demonstrate particular tendencies are passed on to more specialised areas. Such as a novice gifted in lagnuages goes to the Order Famulous, or one that demonstrates a lack of 'stomach' for fighting or shows healing skills goes to the Order Hospitallier.

The famulous are a bit more esoteric in their role, but it basically is summed up as keep a watch on the households and finances of the nobles, as well as their purity and etc.

It's considered a great honor for a noble house to have a famulous.

It is . They help broker arranged marriages and keep track of bloodlines as well.

Overtly, though, their primary function is basically like a master of the estates, keeping everything running smoothly, etc because the nobles themselves are often incompetent at this sort of thing.

I think that most orders maintain an armory, even if they are Hospitallers.

From Dark heresy, the only worlds where they don't come from the Scholam are feudal worlds, where they are recruited almost in the same manner as Astartes initiates by Sisters at the convents there. These are considered the rarest by far.

The scholam makes no distinction. But parents being officers and war heroes are most common. All of them have to be orphans of the military, but there's quite a bit of those as you can imagine.

Back on topic, I also love the Sisters Hospitallier. I see their role falling between that of the Red Cross, catholic Daughters of Charity and the Knights Hospitallier of the middle ages, both providing some sort of basic healthcare to the poor and the needy and acting as battlefield medics when needed.

The levels of indoctrination aren't fully explored, but we need only look at the zealous nature of those that come from the Schola to get an idea.

Back on topic, I also love the Sisters Hospitallier. Funnily enough, despite the name the Knights Hospitallier would be closer to the Sisters Militant, their primary concern was patrolling the pilgrim routes of the Holy Land and keeping the pilgrims free from bandit attacks.

I think I remember reading once that they got their name because they offered hospitality at their waystations. In a place like the Middle East, a safe place to sleep and water to drink while traveling would be literal life savers.
