They don't have the custom of leaving the conquered planet in alien, mutant, heretic hands.

Don't know hom much they lost, I just know that Tau even now don't have ships to match Imperium's biggest ships.
And they can drop exterminatus bomb on the other side of the planet and achieve the same effect. So why don't they?

Contrary to popular belief, the Imperium does not Exterminatus everything on a whim. Exterminatus is only used in the most dire of situations when the world has been so corrupted by Chaos that it can not be redeemed to Imperial service. Hell, INquisitor Kryptman got in trouble for using Exterminatus so liberally in stopping the Tyranid invasion.
A habitable world is a valuable resource, and the Imperium is loathe to waste valuable resources. Losing a world like Taros to the Tau does not provoke a reaction of 'We must prevent xenos from treading on this world! Begin Exterminatus!' it provokes a reaction of, 'Awww crap. =Sigh= Well, guess we'll come back later and try again with more resources."

Of course not, they just preform exterminatus when planet is lost and cannot be taken back by usual metods ( like Typhon Primaris or Dolumar IV ).
And what happened to strategy: "Let's left 10.000 Guardsman to fight the Tyranids to the last man, then blow the gak out of them when the last Guardsman die."?
And I think that Tau establishing a foothold with planet's entire Human population siding with the enemy in Imperial space is a dire situation indeed.

If the imperium has the resources to bring through an Exterminatus bomb, it has enough resources to bring through a big enough expeditionary force. Currently they need the ressources otherwise.

And Taros is very easy to take back using the usual method. Just make sure the commanders are non-idiots, and we'll be back in business.

That tactic is used with Tyranids for a very specific reason. Tyranids usually grow in number by consuming everything, including their and their enemy's casualties. Thus, normal tactics of fighting the Tyranids would only make them stronger in the end.
So, Inquisitor Kryptman had the brilliant idea of holding onto a planet till the last minute, and then Exterminatusing it. This had the effect of forcing the Tyranids to expend the resources to take a world, then denying them the resources they would gain by consuming it. However, the Imperium was getting angry because Kryptman was blowing through planets like a buzzsaw, mainly because each one of those planets is a bloody valuable thing.
The problem with turning these tactics on the Tau is two fold.
a) The Tau don't gain resources the same way the Tyranids do, thus it is possible to resist them in the usual way. Thus, destroying the planet after the Imperium has driven off only serves to deny the Imperium another useful planet.
b) A planet taken by the Tyranids is irretreivable. It is left a barren rock in space. Thus, it's a 'rock and a hard place' situation. Either kill all life on the planet yourself to hurt the Tyranids, or let the Tyranids benefit by letting them kill everything on the planet. However, when the Tau take a world, it is still retreivable. Why waster it by blowing it up?

It's a dire situation, but it's a dire situation that can be rectified at a future date....unlike a Tyranid invasion.

Agreed - the Imperium are telling themselves that they "will be back" when other things have been attended to.
So it might be a few decades but its highly likely here will be another attempt to retake the world.

The Necrons hate everything alive. Areas 'purged' by the Necrons reportedly have no life whatsoever, even down to the microscopic level.
