Here is the scenario:

Let's say I have a squad of 10 Wyches strung out in a straight line. Let's say that one end of the Wyches get assaulted by some Gargoyles while the other end of the Wyches get assaulted by some Hormagaunts.

It looks like this:

G G G GW W W W W W W W W WH H H H H

Question:

When I perform a defender's react, I am supposed to get into b2b with as many enemy models. But, this pulls me out of coherency doing this. Is that perfectly fine?

Playing chess doesn't require skill, it just requires you to be good at chess...

...that would be a skill

No, because you follow the assault rules which require you to maintain coherency.

I think you're supposed to react to the Gargoyles first. Then, if the Hormagaunts can still reach, they get to assault, too.

Oh! I really misunderstood the rules, then. I thought you didn't do a Defender's React until after ALL assault moves have been declared and done.

That's correct.

If you can't move the defenders without breaking coherency, they won't move.

Huh. Good to know.

If you can't move the defenders without breaking coherency, they won't move.

And if this causes some models not able to "reach in" and make attacks, then tough luck?

Multiple assaults are messy, don't be embarrased to play the confusing ones with the rulebook open in one hand, it helps all players involved play fair and by the rules!
