I've read somewhere that you can't move within an inch of a model of a unit you're not assaulting in the assault phase. Is this true?
If yes, can you please give me the page number, I can't find it...

Exactly.
Page 34 mani rules under 'Moving Assaulting Models', you can move within 1" of enemy models in the assault phase, you can't move into base contact with a model unless you are assaulting it or its unit.

Yes, you can end your move within one inch of an enemy model in the assault phase.
You can not be in B2B contact with a model that belongs to a unit that you are not assaulting, any other distance is fine.
