So I've started up a Grey Knights squat army- I've got the new FW Chaos Dwarves for PA GKs, classic Squats for the henchmen warriors, and fantasy slayers for the DCAs. However, I really need to run a few dreadnoughts for long range anti-tank. What do you guys think would be the best way to make a dreadnought a lil shorter without breaking rules for cover saves and such? Maybe I could somehow convert some out of Killa Kans... Any ideas would be greatly appreciated.

Yup, it's pretty easy to de-orkify the Dredd or Kan models, so long as you have or can convert weapons and don't mind a lo-tech steampunkish sort of look.
Re LoS, I suggest keeping the same overall height as the standard Dread model, to avoid endless "You're cheating!" arguments (unless you only ever play friendly games). If you just want the shorter look to make the army feel more squattish, then maybe make a shorter dread (by trimming the legs or torso) but then add flags/banners/comms aerials on top to bring it back to normal height, and explicitly tell opponents that the full height counts for LoS purposes.

You could always use the old rogue trader marine dreadnaughts. There were two leg versions, one longer than the other. If you use the short leg version they looked very squatish to begin with... I have some at home I can take a pic of later if you want a point of reference.
