A couple of questions here.

Can A Valk/Vendy do a ram like a tank?

Can a Valk/Vendy carry Sentinals and if so how many with how much room left for other troops?

no and no

Only tanks can tank shock or ram. Valks are not tanks.

The Valk/vend's profile tells you exactly what it can carry. Walkers are not listed. (the old IA rules for valks did allow them to carry a sentinel, that's been changed.)

On the second, where did I see mentioned "drop sentinals?

If they were called "drop sentinels" you saw them in a Forgeworld book. Wild guess says Imperial Armour Volume 8, Raid on Castorel Novem. It has an army list for Elysians.

Drop Sentinels are now in IA:8, in the Elysian army list.

Drop sentinels are an option for the current Elysian army list. There is no option to take them in a codex IG army.
