I'm not a fan of the Obliterator models and will be fielding several of them in my 1500 point army, does anyone have any ideas on how I could convert normal Chaos Terminators or even techmarines into obliterators?

Take plastic chaos terminators, cover parts of their armor with greenstuff flesh, stick a ton of guns onto the ends of each of their arms and greenstuff it up to look like the metal models.
Essentially, chaos terminator + guns + greenstuff -> try to get it to look like the metal model.

If you are not using the obliterator models because you dont like the look of them the above advice wont be very useful.
If you want something that looks different but is totally acceptable for tournament play you will need to model all the obliterator weapon options onto the model. For this reason a servo harnesed techmarine would be a good start.
If you arent into tournament play i have seen alot of people go down the 'terminator sorceror' road for their obliterators. I think it is naff but if you like the sound of it.

Another option would be a mutation with multiple arms, each holding one weapon.
I abandoned the humanoid look entirely for my IW army, and instead made mini-dreads with 'multi-cannons' (the fluff being that they can be fired with the effect of any one of the Oblit weapons), converted from Sentinels and various Chaos and spare bits.

Im actually thinking this could be doable using terminators too...
Slap something like a cyclone missile launcher on top, drop an assault/reaper cannon, maybe converted with a Las-cannon barrel on one arm, and convert the other arm to hold a heavy flamer. If you have access to a GK kit, slap storm bolters onto the wrists. It will look a bit ridiculous, but I think with a khornate theme it might do the trick (the more guns you carry the more blood to spill type idea)

For my Iron Warriors oblits I used techmarines with harnesses, and replaced the servoarms with as many weapons as possible.

Nice ogrobliterators, LilLoser, they certainly look chaotic, although personally I'd have like more armour (or forcefield equivalents)

Even the obliterator model it's self doesnt have all the weapon options. So weapon WYSIWYG doesnt matter too much.

I'm now thinking of Slapping some weapons on to my Terminators, but I'm not sure how to do it, is there anything that can work like a Servo Harness on the back of a terminator that I could stop some weapons on?

Trying to put half a dozen individual full sized weapons onto one termy will just look silly. Instead, look at the various combi-weapons for inspration, they're smaller than all the individual weapons put together, but still show all the appropriate muzzles etc to show what they are.
Remember too this is Chaos - the wonders of mutation mean weapons don't have to look like their normal versions (as opposed to say a hypothetical loyalist marine version).

I wouldn't have to put half a dozen weapons, 2 on each would be fine, after all the standard obliterator does not have all of the weapons shown on it so there can be no complaints at a Tournament.

That looks really nice, I do like how you have used the Grotesque's fleshy bits to give the obliterator feel as the flesh is joined with the weapons, It may be quite expensive though and seeing as I do have 6 Terminators at home which are never used (because let's be honest, chaos termies aren't that great with Land Raiders not having machine Spirit etc so you're taking a 220 point transport) I will convert them into oblits.
